Executive Chef David Koehn juxtaposes his endless respect for traditional French cooking with his ever growing curiosity for modern techniques. With a thoughtful and fresh approach, Koehn prioritizes understanding the context of the food he creates as it pertains to the incredible history of French cuisine.
Raised in the Southwest suburbs of Chicago, Koehn’s eyes were first opened to the art of French cooking when he first ate at Mon Ami Gabi as a child. Upon receiving a Bouchon cookbook as a gift years later, it was decided this would be his life’s work.
Chef Koehn began his career in 2011 at Beaujolais, where he was introduced to the basics of French cooking. After apprenticing under Chef Bill Gilbert for a year, he moved to California to work as a Commis and Satué at Bouchon in 2012. It would only be a year later that he reunited with Chef Gilbert to act as the Sous Chef for Gilbert’s beautiful, new location for Beaujolais until 2015. Prior to joining the Lettuce Entertain You family in 2022, Koehn served as the Executive Chef at the Paramount Group. It was there that he mastered running multiple revenue centers and coordinating large events, such as product activations for world-famous music festival, Coachella. His highest achievements to date include being a part of six teams that have won either a Michelin Star or Bib Gourmand.
While Koehn will forever be inspired by the greats such as Thomas Keller, Jacques Pepin, Julia Child, Robuchon, Ducasse and Bocuse, he is always looking to younger, contemporary chefs for inspiration. He especially admires the work of Andy Doubrava, Jeremy Fox, and Chicago locals Eric Williams of Virtue and Max Robbins of Longman & Eagle. He is passionate about cooking with seasonal ingredients and is always eager to try new ingredients and recipes. On his days off, you can find Chef Koehn with his wife exploring various neighborhoods and markets within the city, as well as reading cookbooks, planning meals and building legos.
